I thunk cupcakes are a great way to explore cake flavour and icing combinations. It's so hard to pick a favorite but I think in my personal top picks it would be a butter vanilla with condensed milk caramel and almond sour cream with almond bc. My customers go ga-ga for carrot cake with white chocolate cream cheese, guava with cream cheese and chocolate fudge with nutella bc

I've been playing with different sets up cupcakes each month...this month I'm doing sticky toffee, honey lavender, jasmine citrus, pink lemonade, white chocolate raspberry and guava. So far, the ones that most people are liking are the sticky toffee guava and honey lavender :).

Which ones you want? Honey lavender is super easy - whatever butter cake recipe you use swap out 1/4 of the sugar with honey, and sub 1/4-1/2 of the sugar with lavender sugar (depending on how strong you want the flavour). Voilà! The guava, I blend in some guava preserves to my butter cake recipe. Also super easy! :) white chocolate raspberry is my pink velvet recipe with some pureed raspberries folded in. For the jasmine citrus, use a pound cake recipe and let the jasmine tea steep in the milk for a couple of hours before using it. Add the zest of your fav citrus fruits. I've been using my favorite scratch recipes and tweaking them here and there... The results have been delish! I'm on my iPad so I'll post the detailed recipes later

Teneisha - I finally uploaded those cupcake recipes you asked for...so sorry it took me 2 months to do it.  It's been a crazy busy few months, but I'm grateful for it.  I've really been pushing my skills - with both buttercream and fondant and I've been really happy with what I've been accomplishing.  I've been getting quite a bit of wedding cake orders, which I'm sooo pleased about (pics are on my page - I finally updated!)

Surprisingly though, I've been getting a lot of hits about sugar cookies - they are fast becoming the new craze in Cayman it looks like.  They are very time intensive though - so I may have to rethink my pricing structure for them or increase my minimum amount...
