Well, if anyone wants to create a group for the Ace of Cakes, they're welcome to. Why one show is better than the other is not really the cake decorator's fault. It's the producer. Too many heads shots of people sitting and talking and not enough cake is my beef. They're both very, very talented.

I love the show so much, especially because of the family. I am curious though with this show, (and others i've seen) how they manage to film and create their cakes with no food protection in place (i.e. hair nets, gloves etc). I am sure they do this when they are not filming, and it's not glamorous, but i'm pretty sure the health regulations in NJ call for that.

Can someone tell me why he steams his cakes? Does it create the shine or something?

Rather than wet the back of each piece of fondant to stick them on individually, he steams it so he can quickly add all the pieces.
