Hurrah! Australian decorators. Ever since the cake decorators forum closed I've been at a loss for Australian orientated stuff. Apart from Planet cake, there isn't much about in Aus.
I live on the Mid north coast of NSW, just south of Coffs Harbour. It is a waste land as far as classes and supplies are concerned. Most of my supplies are obtained via the internet. I started making cakes for my kids and then word of mouth has seen an increase in orders. I make a lot of novelty cakes and am currently learning how to make realistic sugar flowers from a local lady who does amazing work.
I have terrible battles with humidity here in summer, which plays havoc with my fondant. I don't do buttercream icing as it wouldn't last five minutes up here.
