Has anyone made a "gluten free" cake? I have several people who have made this request at work due to health issues. I did print out some recipes which include frostings from Celiac.com but have not attempted any due to my tight schedule at the moment for Valentine's Day.
I have made several very good GF cakes, so good that people at the parties had no clue that the cakes were GF.
Check Allrecipes.com, there is a recipe for "gluten free yellow cake" and that recipe is now my go-to for GF yellow cakes. Read the user comments and you'll find an adjustment for making it into a chocolate cake; I believe you add appx 1/2c cocoa plus some sugar too. Although for chocolate, we preferred the Hershey's Perfectly Chocolate Cake-Gluten Free. When I taste tested all three of the above cakes, I could NOT believe my mouth, that they were GF. I really was not looking forward to eating them! But was making them for a friend with celiac. Add the right icing and I was glad to finish up my test cakes!
My comment about the yellow cake is that it is quite good although a little bland. When I paired it with Italian Meringue BC and a caramel filling (to replace the butter flavor that doesn't exist in the cake) it was THE BOMB. Also the cake is a little sweet so IMBC was a perfect icing; either that or a chocolate buttercream. I'm not sure if I could have handled the sweetness if it was paired with a vanilla PS buttercream. Ditto the Hershey's - it's a good cake but could use a little pump up...it was excellent when iced and filled with ganache.
Final note is that the AllRecipe reviewers recommended tracking down some Thai rice flour, which is what I used. I cannot guarantee your results if you use normal rice flour; the reviewer said it made all the difference in the final outcome of the cakes. All I know is that with Thai rice flour, the cakes were great.
Also you know of course you can just bake a Flourless Chocolate Cake aka truffle cake. So good, so decadent, and doesn't use flour.

Thank you for the information! I've found so many recipes but it's really costly to pick up all those ingredients. I have to make an Abby Cadabby cake for my friend's daughter who is turning 2 on April 1st, then he asked me to make 30 mini cupcakes, 20 regular and 10 allergy free, for the following day. I will definitely check out "AllRecipe" for the yellow cake recipe. Thanks again!
