Cake Decorating Community - Cakes We Bake

Flipped through the forums and didn't see this question addressed.

 

Do any of you have display cakes? If so - what do you use to cover them? I've seen shows where people meet with cake decorators and in the background you can see display cakes and always wondered if they were covered in fondant? Royal icing? Playdough? Gumpaste? I imagine it would have to be something durable or they would dry out/crumble. 

 

I'm mostly just curious.  Also - how often do you change them out?

when I had my shop I did almost everything in buttercream.  Ice and decorate just like one would on a real cake.  The difference is that styro is sooooo much lighter and doesn't stay put well.  To help with that place a non-skid liner under the cake.  If you don't have a cake board under the styro you can use a damp towel - even paper towel will help some.  But if there is a cake board, it will worp(sp?) the board.

B'cream will last many months on a dummy cake.  By the time it starts to get funky you are ready to show new designs :)  They just scrape off as much as you can and run it under HOT water.  This is a long process - don't expect to just rinse it :)  Let styro dry well before using again.

To cover styro w/fondant just lightly spray w/water just before placing fondant on.

I cover all of my display cakes with fondant. I just use a bit of water or shortening on the foam before I cover it.

When they are not in use I just place a large plastic bag loosely over top to keep the dust off.

I have cakes that have been covered for almost 3 years and they still look great. When I want to clean them off I place the smaller cakes right in my dishwasher and put it through a lite load.
