I want to make my diabetic friend a cake age said she likes carrot cake with cream cheese frosting. Any ideas?

I found a recipe. It calls for shredded carrots and pineapples but I have carrot baby food. I was wondering if I can use it instead. My recipe uses honey instead of splenda
I am diabetic too... but when it comes to carrot cake... I just eat a small piece... it is one cake that I just love. And my recipe is not sugar free by any means... just have to watch the carb intake the rest of the day. I found long ago that I can not give up everything so just check the old blood sugar often!!! Good luck! I am sure if you look the baby food probably has sugar in it too... it is amazing what has sugar in it... I quit eating yogurt because of the sugar content. I am on a no more than 15 grams of sugar a day diet.... not much room for sweets!
I'll double check but I'm pretty sure the baby food will have carrots and water only. Baby food is one of those really basic foods. I stopped buying yogurt for awhile cuz of the high fructose corn syrup.I started making it. I love sugar but not that genetically engineered crap. Luckily Walmart and dannon started making yogurt without HFCs and I just learned I can buy plain yogurt and add sugar, yummmm!

Honey is not good for diabetics because it raises the blood sugar...I know cuz I am diabetic....fruits will do the same but not as much...try using whole wheat pastry flour (at the health food store or substitute some whole wheat flour for the white flour) and nuts, fresh carrots, pineapple but stay away from raisins and coconut. The baby food will not work...you need to grate fresh carrots. Use splenda or xylitol to bake with....and add a little extra oil for moisture or use buttermilk for the liquid. The idea is to lower the carbs. The fat prevents quick absorption of the sugar so in this case it is a good thing. For the cream cheese icing:

2 packages full fat cream cheese (low fat has more carbs) (16 oz)
1 stick butter room temperature (4 oz)
3/4 cup Splenda
1 tbsp vanilla
2 tsp orange zest

Beat cheese and butter until very smooth and fluffy. Add remaining ingredients and beat until smooth and fluffy. Each 1/4 cup has only 3.2 grams of carbs

(its the carbs not the fat)
