Cake Decorating Community - Cakes We Bake

I do sculpted cakes and use fondant and gumpaste embellishments to decorate buttercream cakes too.  How do you charge for your fondant work?  Do you charge by the flower?  What about 3D cakes such as car cakes, character cakes, etc.  Sculpted figurines for cakes?  I really don't know how to price this stuff.  The bakers I know who do this work are big time professionals (TV chefs)and I don't feel like I can charge those kinds of rates. The local bakeries really don't do that kind of work.  I would love to hear from others who do that kind of work and how you price things.

Hi Linda, Thats a tough one. Making fondant and gumpaste decorations takes a lot of time and patience. I charge by the hour. I ballpark how many hours I think a certain project will take and charge a price per hour. You have to decide how much your time is worth. Hope this helps.
I have heard one should charge no less than $25 per figuriene.
Sculpted cakes should start no less than $3.50 per serving - and that's how many servings you would get from hatever size cake(s) you start with - not what you guess it will serve after sculpting. HTH
