Here is my problem, I am so hard on myself when it comes to decorating, I expect everything to be perfect and when it is not, I get angry with myself.
In New Jersey there are no licensing or whatever rules for Home Baking and there is a group that has petition out so we can begin the process and possibly get it all approved. But I have already received my Sanitation Certificate and am acquiring my Insurance for Home Baking as a precaution, the only I would need after that is the Inspector to come out but they won't unless you have the license.
Soo, it's basically me with the problem... I will post pics of the few cakes I have made.
Thank you both for your response and I am looking forward to more advice and guidance from everyone.
I had to learn to step away from the cake and look at it as the customer would - without my critical eye. Of course we will see every little error or mishap. Will the customer? Most will not. Step away from the cake and call it done.
We can only make it so perfect. We are not God. i have looked at some of the greatest decorators cakes up close - they are never ever perfect either. Better than mine, yes... perfect? no.
I once looked up close at a top designer's wedding cake going out the door - full of air holes! And she's getting $25 a serving just because of her name (you would know it if i said it). From that day on I stopped fighting. I get out more air bubbles than she did - so now I stop trying to get every last one out.
Just learn when enough is enough. When it's at the point where the customer gushes and giggles with excitement: You are done.
And if people are already asking you to make their cakes - which is probably why you are thinking of officially opening a business - then you are good enough.
Maridsa, I've feel the same way sometimes and my hubby always tells me that the client won't see the mistakes because they are only looking at the finished product. I'm getting used to and understanding that more and more but I still have to remind myself of it every now and then.
You will be fine. Just keep up the practice and honing of your skills to get better! :)
Life is short! Get in there and do what you want to do! That's the only way you will learn. sounds like your just like the rest of us :) How many started at the top anyway?

This is o true.
I am very critical when it comes to my baking. Most of the people have no idea what I see wrong with it but I do. It makes me feel really bad and question my future as a baker.
Hope I will learn to take it the way you do soon! :)
