Bailey's Mascarpone Filling - easy and delicious

Made this the other day as a filling in my Dark Chocolate Oreo cake.  It was "heaven on a spoon" (as described by my husband).

 

BAILEY'S MASCARPONE FILLING

8 oz. Mascarpone cheese

1/2 Cup Heavy whipping cream

1/2 Cup Bailey's Irish Cream liquor

1 tsp. vanilla

1/4 Cup plus 2 Tbsp. powdered sugar (forgot this in original posting!!)

 

Whip all in mixer using whisk attachment until mixture forms medium peaks.  Refrigerate for at least an hour to let cheese reset.  Use as filling or eat it as a mousse. 

 

It's definitely an adult treat as the alcohol stays in the cream.  And the cake does need to be refrigerated once filled with this mixture as it does contain cream and the cheese.  I put some shaved dark chocolate on top of the cream inside the cake.  YUM!

That sounds so good. I have a customer who wants Amaretto instead of Baileys in it. I'm going to make a batch next week to see how it tastes. She wants it for a cake in June. I'm also going to make it with the Baileys so she can choose.
I just made this.  Took me 5 minutes....O to the M to the G!  It is sooooooo GOOD!  I switched out the Bailey's for Starbucks coffee liquer.  Tastes like Tiramisu!!!!  The BEST!~
Oooh this sounds sooooo lush. I'm a midori fan and I'm going to give this a go using that! I would think it would be nice and kinda summery - and I don't care that we're going into winter here Australia. LOL

Eileen, I've only just seen this recipe.  Ooh yummy - I'd love to try it, but I'd be the one eating it all lol!
