Hey Everyone.... I need a little help.  I got a call from a friend and she wants 3 sheet cakes to feed 100 people, 3 different flavors.  It is for her High School reunion.  I know this is bad, but what size should they be?  I have an 11 x 15 pan and 9 x 13 pan.  Should I just make two of these (either size) side by side for each cake?  I am a little confussed.  I think of sheet cake just being flat, no filling. But then I think it has to bigger then 9 x 13.  I thank you for any advise you can give.

If those are the only pans you have you can make the larger one...make 2 layers with a thin layer of filling to make it interesting. The 2 layers will feed more people than one layer. Technically you can get 35 2"x2" pieces from one cake which will be plenty big. Trim the cake after filling and before icing. You will have 1/2" leeway around the cake. Crumb coat, refrigerate to set, then ice the cake to make it very smooth. Sheet cakes will show every flaw because of the large surface area.
So I did two 9x13 pans and lined them up side by side. This just doesn't seem big enough. I have some bigger pans. I am going to make two of those each and lined them up side by side. I am totally stressing on this cake. I just know it is not going to be tall enough or wide enough. I am going to hate them...Everyone else is going to love it.

My biggest fear is the cake not being cooked all the way. I freak out something is going to be wrong. Why am I doing this? Okay I am freaking out now!!!!!!!!!!
Use your flower nails as heat conductors. You can space 2 in a 9x13. Be sure to brush them with cake release. Also, when baking in pans that large be sure to use bake even strips. If you don't have any there is a discussion or maybe a video on how to make them from old towels.
I use the bake even strips, the best thing I ever bought. I meant to pick up another nail yesterday I only have one. I can't believe I forgot that. Thanks for the advise. I have taken decorating classes, I just want the baking classes too... I mean I have made cakes forever out the box, but I just now feel like I need baking lessons. I want to bake better, now that I have the decorating down.
Gretchen, you can get by with 1 nail in the pan, just put it in the center.

Ahhh... the sheet cake/servings question! I'm still trying to figure that out, myself! Math was never my best subject! How is it coming along, Gretchen? I'm sure it will be fantastic!!! :-)
Well I am at work... the good thing is we have a kitchen, so I bake my cake here. I have 2 out of 6 baked and one in the oven. I hope to get another one in today. I went with my 11 x 15 pan and another one I have that is about the same size. I am going to make 2 and line them up together. I am not to much on the serving size but the size of the cake. I want it to look big enough also.

Okay this is becoming more of a blog for this project... Yesterday I made 2 9x13 white cakes and didn't think they were big enough..... So I pulled out bigger pans and started today with the chocolate and red velvet. I am making 2 of each flavor and just going with it. I was freaking earlier, but have to say I have calmed down. I have baked a layer of each flavor today and they are looking so good. I have to make more tomorrow and have all day Sat to decorate them. So I think I will beathe easier.... Even though the way this layer of white came out, I may toss the layer I made yesterday and bake another tonight.

A single layer 9x13 will serve 24 2x2x2" servings with some leeway. You can cut that in 1/2 and add filling and get the same servings. If you bake two 2" tall 9x13's and fill and stack, you just doubled your servings to 50 1x2x4" tall servings.

It's easy to figure out sheet cake servings (square cakes too). The standard size serving for a single layer sheet is 2x2x2". For a double layer (4" tall like a "normal" cake) is 1x2x4" just like your normal cakes. You just divide it up.

I hate sheet cakes... blergh! The only thing my rectangle pans get used for is to bake off the "lump" to carve when making 3-D cakes... LOL.
Day 4.... One sheet cake is done. It is pretty big. But this is what I pictured. It is pieced together, but I am learning here. I have never done something this massive. I still need to make 2 more of these. Tomorrow will be the decorating. Today is one of my best friends birthdays so I have to go celebrate!!
