Cake Decorating Community - Cakes We Bake

I have a bride looking for a 12" x 18" tres leches cake as one of her side cakes for her reception.  I'm guessing I can just triple a vanilla cake recipe to make the cake, but my concern is that once I've soaked it in the 3 milks it's going to be too soggy to turn out of the pan to decorate? I've never done one this large, and I've always done it for my own family so just left it IN the pan.  Any suggestions, recipes, etc. you can share for a tres leches I can actually remove from the pan and decorate?  Thanks! (PS - the decoration will be simple whipped cream and fruit, so it doesn't need to be super firm)

Have done lots of these. Take it out of the pan and place it onto your cake board. With the butter cream "seal" the bottom edges. Put into fridge let the buttercream get nice and firm. Then you can go in pour the milk. Once that has soaked the you can decorate as usual. Hope this makes sense.

Aaaaaaaah! So you basically make a dam out of buttercream on the sides and seal it to the board! That makes complete sense! But she wants a whipped topping instead of buttercream - any thoughts on that? Maybe I'll do it "small scale" first. :)

Hiya Eileen!

You might want to try using a sponge cake recipe..it will soak up the milks no problem...it IS a sponge right?

The whipped topping wont be firm enough for the dam and it's the only part that will have butter cream. Once you decorate with the whipped topping and they go to eat it they wont even realize.

I'll try it! Thanks, Tracy!
