Cake Decorating Community - Cakes We Bake

May question is I have a wedding to do and they are having 30- 2 tier wedding cakes for each table. Here is my question, can I bake and cool the cakes fill them and dirty ice them and then freeze? I filling is buttercream, the cakes are iced the bride does not want fondant. I will also be doing a  small 3 tier cake for the bride and groom and the bridal party. Please any help would be greatly appreciated.

I did 20 table cakes and a huge grooms cake a few years ago but I did not freeze them... just iced them all the day before the wedding. I never freeze any of my cakes ever so I am not so sure about freezing them with the buttercream already on them. It was a lot of work to do them the day before but I had an assemly line set up in my dining room and on the counters and got them all done.

I have froze many cakes .. however the one time i tried to freeze a cake that i had crumb coated with buttercream.... came out a mess.. the buttercream started sweating down the entire cake once it started to thaw out. it was not good.. i had to scrape as much of the crumb coat off that i could. and completely redo the the crumb coat.. then set for my final coat. i ended up spending more time on it then i would have just pulling the cake out of the freezer and then applying my crumb coat.. hope this helps.. i know that is alot of cakes to prepare.. might try just refrigerating instead of freezing.
I would be really worried about freezing the cakes after you ice them with buttercream....the buttercream tends to "sweat" especially if you're in a muggy room....I would freeze the cakes, then ice them the night before or even the day of the wedding.....you can put them in the refridgerator after they're iced. I just did that last weekend with a wedding shower cake. I baked it the night before, then put it in the fridge with aluminum foil wrapped tightly around the layers then iced it about 5 hours prior to the event. It didn't sweat at all! It's a lot of work but at least you won't have to worry about the icing going South on you..... :) Hope this helps!
