Cake Decorating Community - Cakes We Bake

I am making my first wedding cake & am not sure what type of cake to make. The couple came by and tasted a few samples & want a white cake that is fluffy, & moist much like an angel food cake. But angel food cake is a bit chewy & springy & I'm not sure if it will hold fondant. Does anyone have any suggestions? I've tried several recipes online and they come out dense. Thanks everyone!

Thanks Sherry. They originally liked a white cake I made but decided they wanted angel food or something close to it. I think they are expecting a homemade cake to moist, light, & fluffy like a box cake mix.

Have you tried a recipe for a "sponge" type cake, which would use whipped egg whites folded into a batter? If you google a search for something like "champagne white wedding cake" you may come up with some recipes like that.

In my own experience, if you're going to stack a cake either with or without fondant, it needs to have a strong enough structure.

Good luck! I always have to practice my cakes a few times before the final delivery....and my husbands work friends really appreciate all the samples!
If they went with angel food cake, can you imagine the cutting at the reception? I've found angel food cake to be very springy and chewy, which means it doesn't slice very well.

If you think they are used to box mixes, perhaps have them try the WASC (white almond sour cream) cake recipe. It uses a box, but you doctor it up and it tastes soooo much better.

However, they are the client and it is their wedding. Perhaps you could slice the angel food cake yourself before the reception? It might actually be rather pretty to use a cupcake tree and lay slices of cake and strawberries around it.
I've never had moist angel food cake before. You can educate them about what kind of cake would best suit their request.
From my experience the cake should be dense to hold the fondant also. I had a cake disaster with the fondant pulling the whole side of the cake down and that wasn't even covered in fondant -it was only a fondant drape. Good luck.

I have a recipe for a WASC wedding cake that I got from recipezaar.com. It is my favorite. I get alot of compliments on the taste. Dense enough to hold fondant, but still very moist and light tasting, not too sweet. My Mom's favorite cake is angel food...I made this one for her birthday, she loved it. You kind of have to play with the cook times because they aren't specified in the recipe, but I usually bake a 9" round about 25-30 min. I have tried several of the variations listed at the end of the recipe, chocolate, white chocolate and lemon and they turned out great. Just a warning though, it does not work for sculpted cakes, not dense enough (I tried it, it wasn't pretty). Try a 1/2 batch or even a quarter batch to see if the couple likes it. I did the 1/4 batch by dumping one box of cake mix into a big bowl and whisking it up, then measuring out 1/2 the box (I saved the other half for another 1/4 batch of mini cupcakes). Thanks everyone for your advice. I went with a doctored cake mix & she loved it. Now I'm just nervous cause it's my first wedding cake. Its a 10" round bottom with a 6" off centered top layer. Fingers crossed that it goes well!

Madeira cake is supposed to be good and i think you can pretty much do any flavour. I made a coconut & lime wedding cake a couple of months ago which was lovely and moist and would hold fondant
