Thanks for the Link, but after reading it am more confused. Actually from the begining I was told that all 3 are the same.It was only a few months back when I asked someone to bring CMC from India, I found out that CMC was not the one that I was looking out for making sugarpaste, but the CMC was for bulking icecreams, sweets. It did not work with the sugarpaste. I normally use JEM tylose to make my sugarpaste.

Hi Judith, gum tragacanth is much stronger than tylose c1000p, when you want to buy cmc you have to make certain that you are getting cmc c2000. CMC c2000 is slightly stronger than tylose c1000p. Jem no longer sells tylose c1000p because it is no longer availlable in South Africa, they now sell what they label as petal powder which is cmc c2000. CMC comes in many different strengths, that's why it's so important that you make certain you are getting cmc c2000! You have to adjust your recipe slightly as I've said before, it is stronger than tylose c1000p. I hope this does not confuse you even more! :)
