Not made one before Mandy - but do you know you can buy butterscotch flavouring?  It's not bad at all, I've used it for butter icing before.  I've used the Renley's brand, but there are a couple of makes you can get -

I see my suggestion has been posted Mandy. My Mom would just butterscotch puddiing to her scratch white cake. But a nice touch would be the addition of a scor bar..... chocolate covered crisp caramel chocolate bar. Or butterscotch chips. Not sure if you can get these in the UK.

Am totally lost about the adding of the pudding is this already cooked or as a batter

You just throw the whole package in uncooked into your batter Mandy. Make sure it is INSTANT pudding.  I often throw in instant pudding flavors in my cakes for a "change up'.  One of the best, of all things, is pistashio.  Yummy....   :o)

Mandy - I think this pudding thing is something we don't get over here as such, I've come across it before.  I believe it's something the same as our birds instant whip stuff - remember that? Or Angel Delight?  How you would use it, I don't know.  June or Joann - can you shed light on that?  Do we need to replace something with it, or what?

Nope

Just throw the pkg of pudding right into the cake batter. Then add the rest of your ingredients as normal.  I would liken it to say 125 ml of a Birds custard powder.

Cool thanks June.  Well Mandy - are you brave enough?

Ya.... come on Mandy... be brave..... go for it.....   :o)

I googled  Angel Delight.... and it is more like a mousse as opposed to a pudding, but I am pretty sure it will work.
