Cake Decorating Community - Cakes We Bake

Hullooo all, its me again - I have a wedding cake to do for next Saturday and the fondant has to be purple!  Past experience has taught me that purple gel makes for a bitter taste because one has to add so much to make the colour real - any suggestions on how to overcome this?  Or better product to use?  Thanking you kindly :-)

Wow everybody - so glad to hear all your advice!  I am not aware that we get satin ice or Duff's - bakels is the product that we get easily in SA.  Magdalena has suggested that I use rolkem or barco powders (we only get barco here in this neck of the woods) and I am going to go with your suggestions to add a dash of clear vanilla.  I do have an airbrush and could use the regal purple gel watered down with some alcohol to spray it - am going to do a little dummy run this weekend and see what I come up with.  Thank you so much everybody for taking the time to give me advice - I know that the cake will be beautiful but also just want the taste to be 100 percent perfect as well xox  Have a great weekend all, I am on leave for the next week and will try to catch up with you all from home, but if you don't hear from me for a while, I will chat when back in this saddle.  God bless xxx

I'm just wondering .....what if I made marshmallow fondant and added some blueberry juice (only get tinned variety here in my town) and then add some of the regal purple gel till I get right colour?  Might just work and taste good too - will give it a go and report back :-)

Thank you all you lovelies - I eventually airbrushed the cake and it came out beautifully - my talented daughter came home and I taught her how to do the airbrushing and we made the arum lilies and I covered, stacked and drew the lines, and together we put it together - the bride was very happy indeed.  Thank you all for your input :-)

Oh wow, wow Mandy.  What a spectacular result!  Gorgeous colour and great job all round.  so glad all worked out so brilliantly for you and the bride.

Thanks Katy - I must admit that the colour just popped against the white arum lilies and the light yellow centres - thank you xox

Mandy that is absolutely stunning!  Your colours, technique, flowers are all awesome!

Your cake is spectacular.  I sure wish I could use an airbrush, if I could I would never cover a cake with colored fondant again.  Great job

Hi Sandra, I promise you that it is really much easier than you think.  My darling husband bought me a normal commercial airbrush and compressor and I have been using only food colour and gel mixed with some vodka and after spending a couple of evenings practicing to get my airbrushing techniques perfected, with the help of some fabulous online tutorials (google how to airbrush) I now cover most of my cakes with white fondant (even buttercream) and then airbrush the colours I want - quick and easy and somehow the colours are more vivid than when mixed in the fondant.

Here are two examples - the twilight cake was covered in white and airbrushed black and you can see the deep colour it created - I used black gel colour mixed with vodka (even when I mix black colour in to my fondant I never seem to get this depth of colour); the hello kitty cake was all white buttercream and I used robertsons pink food colouring to airbrush deep pink at base of cake, lightening it up to the top where I left it virtually all white - I find that this type of colouring makes a very nice background for most decorations - please do try it, I promise you will never look back! :-)
