I'm looking at some books- has anyone read these and what did you think?

Cake Boss: Stories and Recipes from Mia Famiglia 

and

Baking with the Cake Boss: 100 of Buddy's Best Recipes and Decorating Secrets

I enjoyed reading both. I did use a few of his recipes but there really wasn't anything thay added to my cake knowledge. I borrowed both from our library instead of spending money.

I bought one of his books but disappointed, nothing new.  I couldn't believe he included a recipe that he called "Italian Whipped Cream" and it was just everyday whipped cream.  Wasted page if you ask me.

so no recipes or decorating ideas?

I'm borrowing both from the library, picking up today. Will let you know what I think!!

So I spent a couple hours going through them, and sad to say, was not very impressed. I'm self taught and feel I have lots to learn but got nothing from either book.  Stories from mia famiglia is just that - stories from when he grew up and some recipes. Baking with the Cake Boss has some of the same and some other recipes - mostly cake and cookies -  and basic techniques outlined - piping, crumb coating, etc., how to roll fondant and cover a cake. Keeps plugging Satin Ice brand....I like to make my own MMF, think it tastes better. Glad I only borrowed them from the library!

ok, looks like I'll be passing on the books...

does it have his sponge cake recipe listed, or any recipes he got from italy?

Have any of you ever tasted his cakes or pastries.  I live in NJ and when I had some family visiting from TN we went to his bakery and bought some pastries and cupcakes.  Sadly I was not impressed and neither was my family.  Some of my local bakeries goods are better and my cream puff filling has it all over his.  I bought one of his cook books anyway and it had more info about his family than recipes.   He does great great cake art but I can't say much for taste.:-(

would you like to share your cream puff filling recipe? I'd like to taste it :)

My husband is a diabetic so my recipe is sugar free but I'm sure it can be made with sugar.  I use 1 package of sugar free cook to serve vanilla pudding and pie filling using heavy cream instead of milk and cooking until it is thick not just coming to a boil, chill, this makes a very thick pudding.  Then make whipped cream using 1 cup of heavy cream.  I sweeten to taste with splenda and add 2 tsp of vanilla bean crush and stabalize with either whip-it or unflavored geletine.  Fold the whipped cream and chilled pudding together.  I've gotten lots of raves about this filling and although its full of fat its sugar free.

It does have the sponge cake recipe and some italian cookie recipes....but honestly, they don't sound very appetizing. Sponge cake makes one layer and he admits that its a very dry cake until you soak it with a liquer or syrup - I think I prefer just to make my moist cakes to begin with.

well, if you'd like to post the cookie recipes I'd like to see them :)
