Good morning everyone,

So I have cupcakes to deliver for a client today, and I woke up this morning and saw that some of the regular size cupcake wrappers unstuck from the cupcake!!!  I have no idea what caused this to happen.  About 10 of them this happened to.  Any ideas why this might be and what causes this?  Is there a quick fix for this??

I cannot rebake now as I do not have time, but I hate to give my customer such cupcakes.  I was thinking of just not charging her for the ones that look damaged.

Any thoughts??

I don't know this from my own experience but I read last week that there are a couple of things that cause this.  1.  Cooling the cuppies in the pan too long  and 2.  Sealing them in a container before they are fully cooled.  Either way the thought is too much moisture. 

Someone suggested putting a little bit of BC between the cupcake and paper and resticking it.  Don't know if that will work though. 

 

I had the same problem with an order last week. I just delivered and set them up with no complaints from the customer. They are much more focused on the taste than wether or not the paper is stuck to the cupcake or not... I would not worry about it and be confident in the taste and quality of your product!!!  Good Luck!! What flavor cupcake did this happen on? Mine were chocolate, just wondering...

I was just going to reply and I see that Deah has the same response.  A little butter cream should do the trick, but if you have a thicker bc,you may want to thin it just a bit.  I also agree with Terri.  People typically don't worry about the paper NOT sticking.  (better to NOT stick than to be dry and STUCK on!)  How are you displaying them?  Can you put those on the inside of the arrangement/display so that the cupcakes next to them support the wrappers a bit?

Anyways the client did not notice them as I did what Toni suggested, put those bad looking ones inside the arrangement so you could not tell! :)  Worked great!!

Boy! This is good to know. This is why I hate making cupcakes just because they always come away from the wrapper. I am notorious for getting cakes/cupcakes/cake balls or any other just baked item right into the freezer, with a cover, as soon as they are baked! Now I'll know better with these darn cupcakes. Maybe I will actually give them a try again. It's also good to know that most customers don't care if the paper is on or not. Good post everyone.

I'm glad everything worked out for you!

Just saw this and have had it happen a few times... I have purchased a variety of cupcake papers and some of them do it every stinkin time... so won't be purchasing those again.   I think it is due to the moisture though.  I have my cupcake carriers that hold 3 dozen cupcakes each and they sweat but the cupcakes do not dry out in them. 

So what are the steps after you bake the cupcakes? 

1.  Take out of the oven

2.  Keep in the pan until cool? Or remove them immediately out of the pan?

3.  Do not cover or store until cupcakes are cooled completely.

1.  Remove from oven when springy to the touch or tooth-pick comes out clean.

2.  Allow to cool in pan for aproximately ten minutes.  This will allow you to remove them without burning yourselfor if you are a "flipper", (like me.  lol) the tops won't get damaged.

3.  Allow to completely cool on the counter (preferably a cooling rack, but I don't always use one).

4.  You can then store them in an airtight container and decorate later or decorate and then place in an airtight container.

The key is that the cupcakes are COOL before you trap heat in the container which will form condensation and may cause cupcakes to pull away from their wrappers.

HOWEVER~ If you are baking for home or a cupcake collage/pull apart cake for someone you know, or just want super-moist cupcakes or muffins, place the cupcakes in the air-tight container when the are slightly warm (not hot).  I do this because I don't care for alot of icing on my PERSONAL cupcakes, but I don't ever do it for a paying customer or for a cupcake display.

Thanks for this....so I baked mini cupcakes again on Friday, let them completely COOL on the rack and they looked great!! Once they were cooled I put them in a container for decorating the next day.  I wake up, check on them and some of them AGAIN have peeled away from the wrapper!!! I was so annoyed....I dont understand.  I used the Wilton Brand mini cupcake liners, not sure if that is the problem.

I'm going to make another batch tonight with another brand and see what happens.  I have to figure out the issue soon as I have an order for 100 minis next week for a corporate event!!! And i would hate to have these look ugly..

Personally, for minis I think cooling in pan for 10 minutes is too long. With minis get them out of the pan ASAP. Dump them out on the counter or a tea towel right away and stand them upright on a rack to cool. (Or you can use two forks like tongs to get them out of the pan.)

With regular size cupackes cool in pan no more than 5 minutes, then get them onto a rack to finish cooling.

Don't put either in the refridgerator until after they are completely cooled. Remember, when cool outside they are still warm inside. You don't want them to sweat, so they can't be any warmer than roon temperature through and through.

Since I've been doing this I have had no more wrapper issues.

Hi everyone,

I think I have figured out what my issue was with my mini cupcakes.  I was underbaking them.  I put them in for 5mins more this weekend and took them out of the pan as soon as they came out of the oven, let them cool.  

I also noticed the top of the cupcakes were not sticky, so they were baked properly and the wrapper the next day was still on!! I guess it wasn't the brand of the wrapper, but me just not baking it long enough!! :)
