I have been making cakes for YEARS and cannot seem to figure out what I'm doing wrong on buttercream stacked cakes. . . no matter what I try, the icing buldges from between the layers.
What am I doing wrong?? How do I do it right??
It's so frustrating!

Sounds to me like you are putting too much icing in the center between layers. Or another possibility, is your icing may be just a tad bit too soft. Do you use meringue powder in your butter cream icing?
There are several things it could be --
Has your cake settled? I bake one night and assemble the next. This is normally my issue.
Are you piping a dam? This can help even if your cake hasn't settled.
Is your buttercream too loose? It may have a tad too much liquid.
Linda's been baking longer than me but I don't find that too much filling causes a bulge in my cakes. I like LOTS of filling!
hahahaha!! Deah! Well so do I!! How do you think I keep my nice 'girly' (very plump) figure?? It's that darn icing-especially butter cream. Yummmmmmm! The more the better! I'm the one who fights for the big rose on top. lol =OD

Dispite 2 major interruptions. GRrrrrr. 1st out neighbour shows upcause he had a leak in his basement & needed my hubby's help, and he hung around. Then unexpected visit from bro & sis-in-law, who stayed & stayed & stayed. They (she) could see I was trying to roll fondant, and call me rude, but I had a time line, so I just kept on working with no offer of tea or coffee. After awhile they got the hint & left. Geez Louise, some people!!!
Also made a beer can/mug cake today for son Chris. So I wasn't the LEAST bit busy!!!!!

Thank you all!! I usually do the dam but after reading all of your comments, I really think that it's consistency of my icing. Maybe it is too soft . . . and I'm usually too impatient or just rushed to let it settle properly!!! I'm a single mom, work a full time job and do this on the side!!!
Doing one today (for tomorrow) so I'll let you know how it goes!

Oh, Becca, I should have been more specific....I was asking June, because she had two cakes she was doing this last week. I went through all of your pictures yesterday, and was totally amazed at your talent, and also the fact that I didn't see any bulges. They just look perfect to me! :o)

The other tip Rebecca is putting 2 tblsp of meringue powder when making your icing. It helps your icing "crust", and dry faster.

I also agree with Linda. Looked at your cakes, and they look great. Don't see any bulges anywhere!!
