Hello Cakes We Bake Family ~ I need help please.

I'm looking for a good chocolate cake recipe.  I normally bake cakes from scratch and have tested two recipes so far and did not like them.  The cakes came out too dry and I don't know if it's because of the cocoa I used or what.  I'm not much for chocolate unless it's a good recipe.  I need to make a graduation cake this week-end and am cutting it down to the wire.

This is my favourite chocolate cake recipe. It's not cheap but it's so yummy it's now the only one I use. It's lovely and moist but still does well holding up decorations and it never fails - a big plus in my book! These are the quantities for a 8 inch cake which comes out 2.5/3 inch deep but it adjusts well to different shapes and sizes, I use this same recipe for cupcakes and muffins too and have used it for ball cakes and it always turns out perfectly.


Ingredients:

190g Butter or Margarine
190g Chocolate, ideally 70% cocoa or above
4 tsp Instant Coffee
140ml Water

110g Self-Raising Flour
110g Plain Flour
40g Cocoa Powder
0.25 tsp Bicarbonate of Soda

420g Caster Sugar

3 Eggs (it doesn't specify but I use large)
6 tsp Vegetable Oil
95ml Sour Cream


Method

1. Preheat oven to 160°C (315°F/Gas Mark 2-3)

2. Line the sides and base of the tin.

3. Gently melt the butter, chocolate, coffee and water in a pan on a low heat.

4. Sift the dry ingredients (flours, cocoa and bicarbonate of soda) into a mixing bowl. Add the sugar.

5. In a separate bowl, combine the eggs, oil and sour cream.

6. Pour the egg mix and chocolate mix into the dry ingredients and mix well.

7. Pour into the cake tin and place in the middle of the oven.

8. Bake for approx 1hr 30mins or until a skewer inserted into the centre comes out clean.

9. Remove from the oven and leave the cake to cool in its tin.
I got this recipe from the net and saved it on my computer it's easy and very moist I use plane choco cake mix
i did'nt put the frosting recipe

Very moist chocolate cake

This is a delicious chocolate cake! Very moist. And always a huge hit whenever it’s served. This is the most requested cake at our family get-togethers!
Ingredients
• 1 Swiss Chocolate Cake Mix
1 small Vanilla Instant Pudding
1 1/2 c Buttermilk
1 c Oil
3 eggs
Frosting:
16 oz. Cool Whip
4 or more grated Hershey Bars
8 oz. Cream Cheese, soft
1 c Powdered Sugar
1/2 c Sugar
Instructions
Mix ingredients for cake and bake until done at 350. I do three layers at 8 or 9 inches round. Mix frosting ingredients until fluffy and thoroughly mixed. Put a generous amount of frosting between each layer and, of course, on top and sides. Refrigerate until served.

This is the moistest cake I have ever made. I once had someone cancel her cake order after I had frosted it, and I served it 4 days later to my guests, and it was still the moistest cake ever. I then sent the leftovers to work with my husband the next day, and they said it was the best they had ever had!
This is the recipe I use...moist, rich, chocolaty goodness...its also the recipe SeriousCakes uses if I remember correctly.

Next Wednesday is my last class for Fondant and Tiered cakes and I've decided to test the waters and make a topsy turvy tiered cake. There are several reasons for making it and one is because I was asked to do a four tiered topsy turvy for a Sweet 15 in June of 2011. Yes, us Puerto Ricans celebrate the 15th and not the 16th. It is more like a wedding than an actual birthday. It is our celebration of coming into womanhood "young lady". There's my lesson for today:)
Jeri's version of the WASC cake is really good and really moist. I think you can find it int he recipe section.
When you make the topsy turvy cake, make sure you use pound cake, any other kind will fall apart. I just recently took a class for and posted the directions with some pictures on my blog. I hope this helps some (I'm not an expert LOL)

Thanks for the advise on the topsy turvy cake. The chocolate will be for a sheet cake.
