Cake Decorating Community - Cakes We Bake

Hi I am new to  cake we bake. I have a question on frosting on another forum some of the bakers use wal-mart frosting. what do you think of it? I will need black frosting for a graduation cake no chocolate so I can't make black using it.  Thanks for your help diggmore

When I need black I use the premade tubes from Wilton. I made my own Black one time. I made it chocolate buttercream first and then put the black dye jel in it and made black, it came out very black that way. The tubes work if you only need a little for writting and decorations. But if you are going to icing the whole thing then you may want to make it.
Thanks Gretchen but they can't have chocolate. I will keep in mind for later.
I use Americolor gel colors and the black makes a really nice black without changing the taste of the icing. I have found that icing made with Americolor gels do not turn your teeth and tounge black, another excellent selling point.
I have not heard of this brand, where can I get them? Thanks

if you airbrush with black food color it does well, just a thought.
to achieve black icing,we usually airbrush our cakes with black airbrush food color . You may start by covering your cake with white buttercream or boiled icing , then spray a thin stream of black airbrush color , then when this first layer dries up, spray it with another layer.You can spray as many layers until you achieve the hue you want.

Her icing tastes really good if you like premade icing. I used on a cake that I had to do several thousand miles from home and had her ship it directly to Baltimore so I didn't have to ship it her then ship it there... she was so sweet to help me out and like I said it tasted very good but... I did not like the way it worked up under my fondant. It was a little soft for under fondant. You can order the sample pack and it comes with a true red and black.
Also... I have used the Americolor gel to make black... be ready thought... it takes a lot of color to make it. I needed black royal icing for Halloween Cookies... it worked but I used a ton of the color.
We used Americolor where I worked, our recipe for making black was 1 tsp. black to 4 lbs. of icing. When it was freshly make it always looked like dark gray but the longer it sat the darker it got. I hope that helps.
