Does anyone know what kind of recipe Buddy uses on cake boss. I recall him saying it has cream cheese in it. I would like to try a recipe like that if anyone has one.

Meghan, if you want a vanilla cupcake, I think that Whisical Bakehouse as the best reipe for vanilla cupcakes. Itried it as a cake once, and didn't like it, butthe cupcakes are the best! Heat oven to 350 degrees
makes 12 cupcakes:
sift into a mixing bowl:
*1 3/4 c. plus 2 tbl cake flour
*3/4 tsp slt
Add and mix to combine:
*1 c sugar
Add:
*1/2 c plus 2 1/2 tsp warmed milk (110 degrees)
*2 large eggs
*4 oz ( 1 stick) very soft unsalted butter
*1/2 tsp pure vanilla extract
Beat at low speed with a whisk attachmnt for 1 mi. Scrape down the bowl. Raise the speed to med.-low and beat for 1 1/2 min.
Add:
* 1 1/2 tsp baking powder
Mix at low speed for 30 sec.
Scoop the batter into the prepared molds, filling each three-quarter full. Bake for 18 - 20 min., or until golden brown.

this is the official recipe for his cupcakes, I guess if you decrease the baking powder by half a tsp, it should be good for a round cake too!!

CAKE BOSS CUPCAKES
Ingredients
2 cups all purpose flour
1 1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
4 egg whites from large eggs
1/2 cup shortening
1 cup whole milk
2 large eggs (add egg whites for a white cake; yolks, for a yellow cake)
1 1/2 teaspoon vanilla

Cooking Directions
Preheat oven to 350 degrees. Line cupcake pans with paper liners. Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large mixing bowl. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes. Fill liners 1/2 to 2/3 full of batter. Do not overfill. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely
i wondered what kind of cake he uses, the way he flips those cakes around without breaking
How did you guys get his recipes???
I am testing my first topsy turvy tomorrow and I plan on using the chocolate portion of this recipe.

6. Pour into the prepared tins and bake until golden and tester comes out almost clean (just a few crumbs attached). This will take about an hour or more.

*Note: If you want to make this a chocolate cream cheese pound cake, simply replace 65g of flour with 65g of cocoa powder.
Was it sweet with 3 cups of sugar?

OMG I was so excited about the recipe (Cream Cheese) that I forgot to put the rum. Will that make a big difference?

Ingredients
* 3 cups all-purpose flour
* 2 cups white sugar
* 1 teaspoon salt
* 2 teaspoons baking soda
* 1/2 cup unsweetened cocoa powder
* 3/4 cup vegetable oil
* 2 tablespoons distilled white vinegar
* 2 teaspoons vanilla extract
* 2 cups cold water
Instructions
1. Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.

2. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

This recipe is actually from the website of the "Cake Boss" software for managing a home cake decorating type business. It is not from Buddy's bakery. It is written word for word on that website and listed as The Actual Cake Boss Recipe. Hope this helps.

4 eggs
2 cups sugar
1 tsp vanilla
1 cup whole milk
1/4 cup butter (lightly salted)
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt


1. Beat eggs in large mixing bowl with paddle attachment for 4 minutes. Do not skip this step!

2. Add sugar, and continue beating for another 4-5 minutes until light and fluffy. Add vanilla and stir on low until just combined.

3. In a separate bowl, sift together dry ingredients. Add to eggs and sugar on low speed until just combined.

4. In a saucepan, heat milk and butter on low heat just until butter is melted. Add to batter, beat just until combined.

5. Pour into two greased and floured 8" round cake pans.

6. Bake at 325 until the middle springs back when touched, or a toothpick inserted in the center comes out clean. Remove from oven and let stand in pans for 10 minutes. Then turn out onto wire cooling racks and cool completely.

Hint: Cakes are close to being done when you start to smell them.
