Hi Ladies,
I was just wondering if you knew of any good cake filling recipes. I have never put anything but buttercream icing in between my cakes and would like to try something new.

hi lady i use custard van/cho, lemon, apple, strawberry,dulce de leche (carmel) and pinapple it depand what they want but the most i use is strawberry......

You can use fresh fruit on top of the buttercream, just ice as usually and add thin slices of strawberries,or cherries, it makes for a great combination, try using different flavors of buttercream with fruit. I also use powdered coffee mate, such as hazelnut, vanilla bean, carameal, you add 2 tblspn in the buttercream and wow it kicks it up. You can purchase different flavors such as creme de mint from cake supply stores. I often make 2 strong cups of coffee and concentrate them down (by boiling) an add them to buttercream (vanilla or chocolate). I like to use coffee syrup such as khula, or cherry or mint to flavor the buttercream. I never use fruit as a filling when i cover the cake in satin ice, because fruited fillings must be refrigerated, and i cannot successfully do that without my fondant sweating. I hear you have to put fondant in the frige on a higher setting than u would usually use to perserve food, and when you take it out, it must not be more than a 10 degree difference, the fondant must slowly come to room temps so it wont sweat.

My cannoli filling is always a big hit! This recipe makes a HUGE batch.... you can divide in half for a small cake.

2 lbs. ricotta cheese (drained)
1 1/2 c. powdered sugar
4 tsp. vanilla
12 oz. chocolate morsels

Drain the ricotta cheese overnight in cheese cloth. You need to make sure there is no moisture in it. Then fold in the powdered sugar and vanilla. Add the chocolate chips. Enjoy!

Can anyone share a good fresh fruit filling receipe?

I learned a great filling trick. Pudding Mix and Heavy Whipping Cream. Use any flavor of instant pudding mix and 2 cups of HWC, beat until thick, like whipped cream. It tastes great, and it stands up well as a filling.
