Very Cool!  I was thinking about cutting it & building it in a cake ring but that is more for production baking.  I always think in doing 12 or 50 of something.

Yeah, baking in bulk is a whole different beast.  I bet you know a lot of tricks :)

I have worked as a Pastry Chef in Large Hotels & Resorts, and had to do that.  But the tricks also help when you are in a small shop and can freeze things and bring them out as needed.
