Cake Decorating Community - Cakes We Bake

I have been asked to do a few wedding cakes but i was wondering if there were any good recipes for diabetic frosting  and or cake as well as gluten free recipes. If any one knows if the frosting would work like normal butter cream.  thanks any help would be a great help.

Funny that you would ask this question because I've been looking for a good diabetic recipes as well. I just came across this site and I have NOT tried anything as of yet.

Oh by the way, Sherry mentioned pillsbury and she is so right. I have had great success with the cake mixes and they have reduced sugar frostings too. Taste great! So moist! Then when I told everyone that it was reduced and showed them the packaging, they ate more! We were happy.

I did make something a dessert for my family and friends late January but it isn't a cake. I can post a picture and share my recipe if you want. Again, it is NOT a cake. It is my Mom's recipe that she made for us kids for years and year ago but I tweaked a lot it to make it fit our sugar and calorie intake as best as I could.

Palm sugar is a great alternative! My pastor has celiac disease and cannot have cane sugar, and it is also good for diabetics with tasting sugar free and no artificial sweeteners. I love it in my IMBC and you can even make regular buttercream with it, but it won't be white. I use it in my baked goods also, though the cake will be slightly heavier but still moist. You buy it at chinese grocery stores. It is "wet" though. Here is some info. on it.:
