Cake Decorating Community - Cakes We Bake

A bride-to-be wants to have this cake done for her wedding in June. The sizes of the cakes are 12", 8" and 6" The bottom tier is in chocolate and the other two tiers will be dummies. She wants the flowers and vines in purple instead of blue.

In light of this, can I get assistance with the following questions:

Can I use Americolor violet to get purple?
Should I add dowel rods to the bottom layer (what tutorial you recommend)?
There is a glossy look to the cake and flowers, how was this effect achieved?
Is there a tutorial on how to make the vines on the cake?
What flowers is this and the tutorial for same?
The border for each tier looks like mini pearls (not edible), could you confirm?
What size of cake board is recommended?
 
I saw craftsy is offering a course on making swags etc, so I will sign up for it, with about two weeks to go before the wedding, there is still time.

Hi Kerry,
I can help with a few of your questions. I'm not really sure about using dowel rods when using dummy cakes but Wilton.com has step by step instructions on how to stack cakes. You can also find You Tube videos on the internet as well showing you how to do it. It looks like the pearls or dragees on this cake most likely are edible and can be ordered from a number of places in various sizes. I usually go on Amazon to get them when needed. The gloss/shine can be acheived by either using 1) PME Sugarcraft Glaze Spray - Edible which can also be purchased from Amazon, 2) you can use a 50/50 mixture of vodka & corn syrup and either paint it on or spray it on (I use the little .99 travel size spray bottles from Walmart), or you can use the Wilton Pearl Color Mist, it's basically an off white color w/a pearl shine similar to what this cake appears to have. As for your question about using Americolor violet to make purple, I've used Wilton violet to make purple. I did a purple & gold masquerade mask using the Wilton violet if you care to take a look to see how the color came out & if that would suit your needs. I have no experience w/swags, drapes, or pleats so wouldn't be able to help in that area except to say that there are many tutorials available on the web. Your question about the size of the board, I usually go about 2 inches larger than the size of the cake. One thing I'm certain of is that you will get excellent advice & suggestons from the members here. I wish you the best of luck & I'm sure your cake will be as lovely as the one pictured. Make sure you post pictures when you're done so we can all see it :)

I tried to edit my post but apparently it did not work. If using the 50/50 mixture of vodka/corn syrup, you can also add some Wilton white pearl dust to the mixture. If you're concerned about using vodka, no need to be, the alcohol evaporates. There is no after taste or smell.

As far as the color, it would depend on the shade the bride is looking for.  

All the tutorial I have seen on dummy cakes, show that you don't need to dowel.

For the sheen on the flowers, I do what Denise already mentioned about with vodka/corn syrup mix & use a spray bottle but you can also buy the glaze.  For the cake there are also a number of options:  Here is a tutorial on one option https://www.youtube.com/watch?v=7sUuzDNR64A.  If you use luster dusts, make sure that you are using edible not non-toxic.  

The vines if you have an extruder it will insure that it is all the same with and then just use a small 5 petal cutter for the flowers.

The flowers I wouldn't bother purchasing any special cutters but just adapt something that you already have.  You can probably use a leaf cutter or something.  After it's done, use a darker purple dust in the center. These look like they are wired but you can probably get a similar look without wiring them (need a thicker center)  They just look like fantasy flowers to me.

You are right about the border,  it does look like mini pearls.

Denise, all the cakes are not dummies. The bottom tier is a 12" round chocolate cake, the other 2 tiers on top are dummies, so I was wondering about dowel rods because of the weight of the fondant and swags from the other 2 tiers on top. I'm not from the U.S., but I believe I can get my hands on the items.

The bride did not state the shade of purple she just mentioned she wants purple and left it up to me.

I'm wondering how much fondant is required for the swags. Thanks for your support and I'll post pics.

It wouldn't hurt to use support on the real cake to insure that the dummy cakes wouldn't collapse on top of it.

Not sure how much fondant you will need for the draping.  All the tutorials I have seen, they recommend a mix of fondant & gumpaste which has to be rolled very thin.  Here are some tutorials on that:

I understood that the bottom tier was going to be a real cake, just wasn't sure if the dummy tiers needed to be supported. Now that you mention the weight of the fondant I agree w/Goreti that it probably wouldn't hurt to have them supported.
