Happy Friday everyone :)

I was wondering if anyone can suggest how to make strawberry and cream cheese filling? Is it basically mixing fresh strawberries with cream cheese?

I'm worried about it getting really soft because of the strawberry juices!!  The dam on the cake has to really be able to hold this.

Any thoughts?

What I've done.... made a layer of cream cheese frosting then used strawberry preserves on top of that as a filling.

(not as runny) then used fresh strawberries as a garnish on top & around cake.

Maybe someone else will have another idea. 

Nope - strawberry jam, conserve, or preserves are the way to go ... 

You can flavour your cream cheese with strawberry essence if you don't mind not having the real fruit in there?
