So after seeing several pictures of beautifully decorated dessert tables, I realized how many baby showers, bridal showers, etc. that I have been to where cake is the only dessert and sometimes is not what I want, so I skip. It got me thinking about dessert tables, actually, thinking about opening a business that only caters to dessert tables. I would offer custom design to the client's theme and even help to develop one if needed. I would also do set up and rent out any stands, vases, trays, etc. I would offer several varieties of treats, including cake, but instead of a cake with several tiers I would offer several cakes of different flavors. Does anyone think that a business like this, ONLY doing dessert tables would be lucrative?

It would depend on the area you would cater for Jackie. But I did read an article recently (can't remember where sorry), that said that dessert tables were becoming increasingly popular. I have to say, when I do a big family dinner for an occasion, I always am the one that makes the cake, but do like to make a second dessert as well, so that everyone gets a choice. Not everyone always wants cake (although with my lot it usually ends with most people having some of each lol!)
Sounds like a great idea - something I would have love to have done myself, as I am a keen dessert maker too. You do need to do plenty of research as you say, to make sure there is a market for it. Drop some flyers into to mailboxes in your area and follow up a few days later to see what the response is like. Ask friends, colleagues if they would go for that if it were available, that sort of thing.
