Hello all,

I am looking for a recipe for a lemon cake.  Mine are coming out more like a pound cake, I have tried 3 different recipes.  I would like one that is light and airy (kind of a melt in your mouth feeling) and has a delicate taste to it.  Does anyone you one?

I posted a pink lemonade cake Faith. If you go on my page, you will see my blog posts. Or just type pink lemonade cake in the CWB search area. Think I did add sour cream in the recipe. But if you eliminate it completely, and add xtra oil, that will make it light & moist. Another trick to a light batter is to separate the eggs required for the recipe. Add the yolks as per usual, then beat the whites till fluffy, fold them into the batter just before you put into your prepared pans. My Mom taught me that trick. :o)

I have a lemon cake recipe in my blog on here too.... It is one of my most requested cakes.  I do use sour cream so if you don't like that you might not like it.

Faith, did you find my blog?  Sorry I have not been on much lately... my brother in law passed away and we are cleaning up my mother in laws estate as she is in an assisted living center.  With the end of the school year it just has been way busy for me the last few weeks.  Have turned down so many cakes because I just don't want to take any more on!

I made this cake twice, it smells amazing but it didn't rise very much.  did I do something wrong? I wasn't able to make I earlier due to family issues and I'm sad I have to make 4 layers in order for it to make about 5 or 6 inches.  My baking powder is fresh so I know that's not it.

If you read my recipe Faith, it states I baked the cake  in a 10 x 3" pan. So you would have to bake 2 & stack to achieve a 5-6"  layer cake. Now a 10" pan is pretty big & I used it  to make the bottom layer for a wedding cake. And I added sour cream because I wanted a dense cake, like a pound cake to hold the top tier. So you didn't do anything wrong. It would depend on the size pan you use  to determine the size/height of your cake.  Hope this was helpful.  How was the taste and texture?  Were you satisfied with that?
