I will do anything to get out of making cake pops... but when I do... I just make the cake of my choice (or use left over cake) crumble it up very fine... add a little buttercream just enough to bind the cake together. Make into balls then dip in the chocolate. You can add shortning to chocolate chips OR easier use the candy melts... C&K... merkens... wiltons... they all work about the same but I like the flavor of merkens the best.
I have made cake pops from scratch Wendy..... in my opinion, a LOT of work. I bought a cake pop maker on sale. Much easier. I can tell you, I would make cupcakes & fancy them up because as jeri said, I would avoid all the mess. I actually just use chocolate chips I bought at the grocery store for dipping. First time I did them, so hard, then I found the shortening trick. That really, really works well. When I made my Easter Cake Pops, I really thinned the chocolate chips..... so much easier to dip. And it gave the pops a nice glossy finish. :o)
None of my pops are ever picture worthy! ;-) They taste good but nothing I want to brag about for sure! I always goo over the pics that others post and love them! You can also use paramount crystals if you can get them. They work well to thin out chocolate too! Good luck hope you have a better time with them than I do!
