I am finding that when I put buttercream on a cake then my fondant comes out wavey. My cake place says to just crumb coat the cake and then add the fondant but I don't like the taste of fondant so I prefer to frost the cake prior to putting on the fondant. any suggestions? I googled how to do this and I had people say to frost then put it in the refrigerator then others said to just crumb coat... HELP!!!!!!!!!!!!!!!!!!!

Hi Faith! If you are going to use buttercream, make it smooth first before covering with the fondant. Use an icing smoother then put the cake in the fridge to harden the buttercream. Take it out then cover it with fondant. Use ganache in case your buttercream melts because ganache is more stable. You can put the cake with ganache in the fridge for just a few minutes just to settle then take it out and start smoothing it. See to it that there are no bulks or uneven edges before covering with fondant or it will show up on your covered fondant. Hope this helps. Let me know if this works for you.

Too much buttercream under fondant does do that. I agree that letting it set up in the cooler will help harden it enough to get a smoother finish. I use ganache quite a bit and it is so wonderful under fondant. If you don't want chocolate you can use the white chocolate to make it.
