Hi everyone,I hope you are all well :-)

 Ive been asked to do a 40th Wedding Anniversary Cake for the 20th of this month, and i need some ideas? Ive been making coffee cakes for the couple for a number of weeks now and they have asked me to do thier anniversary cake! So i want it to be brill.

Ive seen some pictures but im not sure what to go with. Its to be either an 8 or 9 " cake and has to have 40th on it basically. Although i think it needs a little something else or it will just look like a birthday cake !!!

Hi Lis, welcome back!  Ideas popping out of my head all over the show here.  40 years is their Ruby Wedding, so I would suggest you have to get ruby red in there somewhere!  Your flowers are pretty good, aren't they?  So how about some red roses on white fondant.  Plus a classic italic style writing saying something like 'On Your Ruby Wedding'  or their names + 40 years of marriage.  Trim the cake with a classic red ribbon.  I'm guessing their ages to be between 60-70 and think probably classic would be more appreciated than fancy.

Would love to be able to do that !! Ive seen some piping and it looks stunning,like yours.

This ive not done either !! Panick lol Do you think ive enough time to practise this ?

I was thinking if a few ruby red roses poss glitterd maybe a couple of red hearts? Would love to pipe like you too !  I have a rose embosser maybe i could use ?

Rose embosser sounds perfect.  Hearts is always good for a love theme.  With writing - practice it on greaseproof for a while (use a No 1 or 2 nozzle). Or use cut out letters if you have any of those sets.  My writing is really bad these days, due to partial sight, so I avoid it whenever I can!

If you want to practice the lattice style work, it's not hard.  Just make sure you use royal icing that is going to set really hard so you can handle it to stick it onto the cake.  So use lemon juice and egg whites.  Leave it to dry for as many days as you can spare!

Is there a particular ratio for the royal icing/ egg whites or recipe ?

Here's a link to Mary Berry's Royal Icing.  But leave out the glycerine if you want it to dry really hard, glycerine softens it a bit so you don't break your teeth on it, if you have covered the cake in it.

I tend to just do mine by eye, so have no idea what proportions I use lol!

Ive also got to make a birthday cake, 7-9 " chocolate sponge. Btw, your recipe for the Devils chocolate cake was a MASSIVE hit !!! Thank you for that.

Its got to be either a purple theme or black and white cat theme ? I would like to do the purple as i did a cat for the lady at christmas.

Hi Lis - looking at that picture, it looks like the roses are not embossed but rather stuck on?  difficult to see exactly.  But with an embosser, you just press it on to your fondant and it leaves an imprint of your design which you can either leave plain, or paint.  I guess the magazine will give you instructions on how to use it......looks like a fun thing though. Of course, it could be more like a patchwork cutter... I saw this mag advertised on TV - have you subscribed to it?  I was thinking of getting it myself.  There's a couple of vids on youtube about embossing and painting patchwork cutouts, here's the link to them both -

Glad the devils food cake came out well - it is yummy isn't it!

Purple cake - great!  There are so many things to do with this.  There are loads of cakes on this site that might give you inspiration.  Just search purple cake in the top right search bar on the main page.

The mag, you can just buy in newsagents or supermarket. They have started another on first issue at mo is 99p with it just for the two butterfly cutters and pot of glitter ( usually £2-3 ) The next mag is £2.99 if you subscribe its £4.99 I read the " small print " !!! Ive got an idea for the purple cake but i dont know how to do the ruffles? I dont know if they are piped or fondant?

Ruffles can be done both ways Lis.  If you're not confident with piping or don't have a suitable nozzle, then fondant is probably your easiest way to go.

Can i make them from fondant if im no good at it?!! lol 

Can i use red gel colouring to paint the roses more red ? When i add the tragacanth to the red ( or any colour sugarpaste) It dulls the colour. I would like to have them a more red colour and glitter just a few of them.

 

I was thinking of doint the "40"  in small roses and have a few draping down the side of the cake ( different sizes), what do you think ?

The arrangement idea sounds perfect.  I like flowers draping down the side of a cake.

Fondant frills are easy, so definitely go that way if piping fails!

Re the colour.  

You can either buy a petal paste already coloured, so no need to add tragacanth

or if you make your own, yes you can paint them again afterwards to deepen the colour.  You might need to thin your gel colouring down just a tiny bit (use vodka or gin - it dries quickly and helps add a bit of a shine too).  Or you can petal dust them.

Steam your flowers after they are dry.  It sets the colour and adds a glorious shine.  I'm guessing you don't have a steamer, so just wave them over a steaming kettle.  You'll be amazed at the difference it makes. 

Thanks Katy, ive bought an embossing mat and a flower former ( a Petunia) had to pay a little extra to get them in time but worth it. Ive got some rejuvenator could I use that to thin the gel ?

I will try the steaming too hopefully they wont fall in the kettle spout LOL
