Cake Decorating Community - Cakes We Bake

So, I have 2 small cake orders in the next week.  One is for this Thursday and one for next Monday.  They are both vanilla.  I am pretty sure I can make both cakes with one batch of batter.  However, I want to freeze the cake I will use for the Monday order so it does not get stale.  I am not going to decorate it until Sunday.  Do I need to let it thaw completely before covering in buttercream and fondant?  I'm concerned about the condensation that might occur while defrosting.  I plan on double saran wrapping then wrapping in foil to freeze.  Should I let it thaw in its wrapping?  Or unwrap?  Thanks.

Hi Ken.  Yes, let it defrost first.  If you don't, your butter icing will crack and then the condensation will sog up your fondant.  You can defrost it slowly overnight in the fridge in it's wrapping, so it doesn't lose moisture, then unwrap it and let it stand at room temp for a while before crumb coating, just to make sure there is no standing moisture on the cake.  At least, this is what I would do, and have done.

This gonna sound crazy, but I put my frozen cake in the micro for anywhere from 20 sec to 40 sec depending on size of cake. It is then about 3/4 thawed. Enough to slice in half & torte. I found this trick by accident when I forgot to put my cake in the fridge the night before to thaw out.  Most times I put my cake on the counter, still wrapped,  and just let it get to room temperature. But I am retired & have lots of time.  But Katy is correct Ken when she said you cannot ice or cover your cake in fondant when it is still cold or partially frozen. As she stated, will make your cake soggy.   :o)
