Cake Decorating Community - Cakes We Bake

my daughter wants a fruity wedding cake. She hasn't given me much to go on. I have to cover the cake in fondant. So does anyone have a good recipe for some kind of fruity cake and filling that would be good for a wedding. Thanks for any help!!!

I've done "peaches and cream" as a filling on a yellow cake (white works but I think yellow is prettier with the peaches).  I made a custard and topped it with a peach filling.  You just need to remember to put a buttercream rim around the edges (I forgot) or the peaches have a tendancy to cause the custard to leak.  I would be tempted to do one layer with peaches and another with chocolate cake and a strawberry filling.  Just some idea, I'm sure you'll get a ton more.  Good luck....and Congratulations!

Or maybe a cherry madeira filled with cherries (we have a cherry pie filling over here that comes in cans and is completely delicious) and cream cheese butter cream.

Does she want a sponge based cake, or would she consider a rich fruit cake (the type with mixed dried fruits in).  If she would be interested in that (which is the old traditional style wedding cake in the UK), then check out Les Browns recipe - The Best Ever Rich English Fruit Cake.  It is to die for!

one more thought....if you want something very unusual.....

I will be making candied quince, quince jam, quince patte, and quince sherbert marshmellows today.  I discovered a couple of years ago that my "inedible pears" in the back yard were anctually quinces and that you had to cook the fruit to eat it.  Very glad we didn't cut down that tree!!! 

If you would like to make a candied quince or quince jam filling just let me know and I will send you some :o)

It is hard to figure out what she wants. She is in the navy and is stationed in quam right now so she can't try anything. I have to try it for her and hope for the best. Wish me luck :)

It reminds me of a strong tasting apple.  It is very popular served with cheese, but when you candy it or make jam it is a sweet apple taste.   We made fruit leather the first day we found out they weren't pears just to try them out.  They are yummy!   I found a site full of recipes and ideas.....thank goodness because I picked over 10 gallons from 1 medium sized tree this morning.  You can learn more about them at this site:
