Cake Decorating Community - Cakes We Bake

Hi everyone, ive just joined. Ive been looking for ages for a great cake site and ive finally found it !

Im kind of new to this, although i can make sugarpste flowers and shoes etc. I watched my nan for years but its only now that ive stated to do it for myself.

 

Please forgive me if ive posted this in the wrong place!

I made myself a birthday cake last week, for my birthday . I made a pair of black glittered high heel shoes , butterflies & flowers ( blossoms and carnations) all made fom sugarpaste.

And now ive been sked to do a 21st birthday cake ! Panic !!! What have i done ?! lol ) 

 

I have so many questions and im hoping to get some geat advice on here from you all and make some newfriends too.

Ive been asked to make a giant cupcake. With white chocolate butter icing. Could i use a white chocolate ganache instead ?

This is for the 25th nov so, hopfully enough time to get it right. I have seen the moulds for these, has anyone used one before ? Also, how much cake mix would i need ? And im terrified about piping it  ! What size nozzel? Would i need a large piping bag ?

I'm at the library all the time.  Whenever I hear about a good book, whether it's a recipe or decorating book, I log on & check if any library has it.  I put a hold on it and the local library emails me when it's in.  Voila.  I even got a book on how to make clay figures and used those directions to make the fairies for my great-niece's birthday cake earlier this year.  As a matter fact, I have 3 waiting for me.  I was going today but not with this weather.  Will see how it is tomorrow.  Might pick them up then.

Hi Lisa and welcome to the site chances are if you cant get the answers to questions on here from all the wonderful friends you will make then either the question hasn't been though of before or there isn't an answer lol

Thanks Goreti, i did buy 3 books on cupcakes and they are brilliant, not just recipies but fairies and, birds etc.

Although my cake took weeks of planning and hard work, it was so worth it. I want to do it again lol

Oh yes, it's addictive all right.  You find yourself looking for excuses to make someone a cake, just to try out something new that you've seen on here!  And Lisa - check out Les' cake photos, he is AWESOME!

After i had gone though sleepless nights, stress, weeks of planning and countless hours of making my cake, i did have a huge grin on my face when it was finished the night before my birthday about 9:30 pm! And then i thought.... ' I wanna do that again' !!! lol

 

I certainly wasnt expecting to be asked to make another! I did think..' whoes got a birthady comming up ? Mmm christmas cakes ??'  !!

Your cakes really are beautiful !

I havent got the hang of using wires yet. I did try them for fuschia's but i think the wire was the wrong size. I havent got much in the way of cutters yet.

Ive done roses, although i cant help but get the bottom too bulging when i use a cone ! But the rest of the rose is perfect.

Although i dont like roses, i guess ive got to get them right. I found the blossoms and carnations easy.

Hi Lisa & thank you Katy for the nice remarks regarding my giant cupcake :-)
Lisa I love making these & they are much easier than they look. My mould is silicone & in 3 parts bottom a divider for bottom so as to leave a inner middle for cream or jam ( I put jam) & the top.
My first peace of advise would be line the bases of both top a bottom moulds, the top just needs a tiny small round at the ver pointy bit. I really grease well more than normal (Little So & soo's to come out otherwise) I use white flora to grease. Depending how rushed i am you can cook both at the same time on the same shelf but I do prefer to cook separately because they do take different cooking times. I always use a Victoria sponge recipe, I have the heat lower than 180 & start checking after 40 minutes then again every 6 till cooked through.
For the decoration I can only say try you will be surprised if you are going to decorate the base with buttercream like I did just spread a small amount all over first so you have something to stick to or it may full off.
Hope this helps you will be fine. I charge from £25 for simple a giant cupcake but mostly £35 no one ever wants simple lol
O & one last thing I use a 10" round drum & box but add my own DIY inserts for extra height
