Hi Leah, I would never consider covering a dummy cake with gum paste or a real cake for that matter. I would use fondant and let it dry for a day or two, it will harden and you should be able to do what you want to. Remember to lightly brush or spray the dummy cake with water before putting the fondant on.
I did this once to display my cakes it last a very long time, I had to wash it out eventually because it started to pick up dust. I used 70% fondant and 30% gum paste, kneed them in and let it rest for an hour, roll and apply.

It so durable that the product can be sanded smooth to resemble fondant. :D Try it!
I have fondant covered dummies that are two and three years old in my closest that I use at wedding fairs all the time. Keep them out of direct sunlight and away fro dust and they last forever. I keep mine in a box in the closest. They still look new and are hard as a rock.
I use whatever cheapest fondant I can find.

I know it's a year too late since you asked your question. Well I read it only now. You sure can use Gum paste to cover your dummy cakes...I've been doing it for years. With the right gumpaste recipe you should not have any difficulty covering your cakes. Sometimes it works better than fondant too! Did you ever cover the dummy with Gum paste or Gum paste fondant? it works for me for displayed cakes only.
With Gum paste only G/T....Here a lot of people opt for Dummy cakes instead of actual ones. Gum paste works best in these situations. Some of our customers have reatined their dummy cakes for a long time!!
Never did tried gum paste only, I will try this next time, but the 70% fondant and 30% gum paste do work well.
I'm in need of making a dummy cake as well - the last one I made faded terribly. Tonight I removed all the old faded fondant. Even my white turned a little yellow. What do you suggest to avoid the fading over time of the dummy cakes?? I need to make this dummy cake tomorrow 8/14/12, so any URGENT help would be much appreciated!!
