I agree that a paper towel would probably be better than the parchment paper...that is one of the peeves for me...it won't bend to the cake and I end up creasing it instead of smooth! =) Paper Towel it is...I will try! =)

I've used parchment paper and that works fine, too. The only drawback with the parchment paper is that it is stiff, so it doesn't want to bend around the edge of the cake the way the paper towel will.

That is really great! I was taught at one of my cake classes to use parchment paper...is that as good as the paper towel??? I can't seem to get it right with the parchment paper...seems FOREVER before the crust cover happens. Or maybe it is just my impatience! =)
