I was wondering if you have used much modeling chocolate? I am making a cake for my daughter that looks like presents but she doesn't like fondant so I am trying to find information on using modeling chocolate instead. Thank you for any help you can give me. Your cakes are very pretty. I will be making a Yoda shortly after my daughter's cake for my son so it was neat to see your Yoda on here.

Gluten-Free baking for Celiacs (with recipe & frosting to try!)

Gluten-free baking poses it's own unique set of challenges, and once you start baking without wheat based flours you'll notice that each gluten free flour has it's own unique properties. Cake carving can seem intimidating when you first start cake decorating with one of the biggest challenges being not knowing where to start! My moto is that if you can stack a tiered cake you can pretty much make anything!

It's all a matter of getting your cake tiers to your desired height and then patiently carving and carving and CARVING!!! :-)…
