I HAVE ALWAYS WANTED TO MAKE CHOCOLATE MMF. I HAVE A GOOD BASIC RECIPE FOR HOMEMADE FONDANT, SO I KNEW I JUST HAD TO PLAY WITH IT TO GET WHAT I WANTED

I PURUSED THE INTERNET, SEARCHING.  THANKS TO    "MrsNancyB1"  ON CC WHOSE RECIPE FOR CHOCOLATE MMF I LIKED BEST.  I TOOK IT, USED MY BASIC RECIPE WITH HERS, TWEAKED IT, AND CAME UP WITH A WINNER.

MADE THIS RECIPE FOR THE DAISY CAKE I POSTED. IT WAS POSITIVELY YUMMY.    HERE IS MY RECIPE.

 

1 16 oz. BAG MINI MARSHMALLOWS

2 TBLSP CHOCOLATE SYRUP   

2 TBLSP CORN SYRUP

1-2 TBLSP FLAVORING OF CHOICE...I USED CAPPUCCINO

3 TBLSP COCOA   DUTCH COCOA IF YOU CAN GET IT

RESERVE 1 TBLSP COCOA FOR KNEADING INTO FONDANT

3-4 CUPS ICING SUGAR...I ONLY USED 2 1/2 CUPS AS IT WAS VERY HUMID. DEPENDS ON THE WEATHER THE DAY YOU MAKE IT

ADD THE SMALLEST AMOUNT OF ICING SUGAR FIRST, THEN ADD A HANDFUL AT A TIME. iF YOU ADD TOO MUCH ICING SUGAR, IT BECOMES VERY DRY, QUICKLY. THIS IS WHY I USE MY HANDS TO MAKE THIS AND NOT MY KITCHEN AID MIXER. YOU TEND TO ADD TOO MUCH ICING SUGAR WHEN USING YOUR MIXER BECAUSE YOU CAN'T TELL THE FEEL OF THE FONDANT. I KNOW THIS FROM EXPERIENCE.  WRECKED A FEW HOMEMADE BATCHES BEFORE I FIGURED THIS ONE OUT.

GREASE YOUR WORK SURFACE WELL WITH SHORTENING....CRISCO

USE A GLASS BOWL AND GREASE WITH SHORTENING SO REMOVING THE STICKY MIXTURE WILL BE EASY. YOU CAN ALSO USE A POT ON TOP OF YOUR STOVE IF YOU DON'T HAVE A MICROWAVE. IT IS NASTY TO TRY AND REMOVE THIS FROM A PLASTIC BOWL.

PLACE 2 CUPS OF ICING SUGAR ON GREASED SURFACE AND CREATE A WELL IN THE MIDDLE TO POUR YOUR MARSHMALLOW MIXTURE INTO.  GREASE YOUR HANDS WELL WITH SHORTENING BEFORE YOU BEGIN TO KNEAD THE FONDANT

PLACE MARSHMALLOWS, CHOCOLATE SYRUP, & CORN SYRUP IN A GLASS BOWL. NUKE IN THE MICRO 1-2 MIN.

REMOVE, STIR WITH A METAL SPOON. ADD YOUR  FLAVORING AND 2 TBLSP OF COCOA, WORK FAST STIRRING MIXTURE THEN QUICKLY SCRAPE MIXTURE INTO THE WELL OF ICING SUGAR.

WITH WELL GREASED HANDS BEGIN INCORPORATING THE ICING SUGAR INTO THE MARSHMALLOW MIXTURE. WHEN FONDANT IS JUST SLIGHTY TACKY, ADD THE LAST TBLSP OF COCOA AND KNEAD INTO FONDANT.

THIS MAKES THE FONDANT DARK, RICH AND CHOCOLATEY. YOU COULD ADD MORE COCOA, BUT TOO MUCH WILL MAKE THE FONDANT DRY, SO BE CAUTIOUS.  YOUR FONDANT SHOULD BE SLIGHTLY TACKY, BUT NOT STICKY.  WRAP YOUR FONDANT IN A GRESED PIECE OF PLASTIC WRAP AND PLACE IN A ZIP LOC BAG OF CONTAINER

THE FONDANT SHOULD REST FOR A COUPLE OF HOURS TO OVERNIGHT FOR BEST RESULTS. I USED MINE THE NEXT DAY, AND FOUND IT A TAD DRY. I ADDED ENOUGH SHORTENING UNTIL I FELT IT WAS SMOOTH ELASTIC/PILABLE. WHEN YOU ROLL OUT A TEST PIECE, THERE SHOULD BE NO CRACKS IN THE FONDANT. IF THERE IS, JUST ADD MORE SHORTENING.

THIS WILL COVER A 10"/3" TO 12"/3' CAKE. YOU WILL NOT HAVE MUCH LEFT OVER.

TIPS}  1.WHEN ROLLING OUT THIS FONDANT, USE COCOA INSTEAD OF ICING SUGAR. THEN THERE WILL BE NO TELL TALE WHITE MARKS LEFT ON THE FONDANT FROM ICING SUGAR TO SPOIL THE LOOK

2. THIS FONDNAT WILL FREEZE. JUST BRING TO ROOM TEMPERATURE AND RE-KNEAD TO USE

Would balsamic glaze be a vinegar thing?  If so, yummy again - salt and vinegar on chip shop fish and chips (with a pickled onion of course), or mayo on spit roast chicken and chips.  Drooooooooooooooling here guys.  Sadly, I don't eat these things much anymore, but used to a lot (which is why I was huge lol).

My hubby use to have chips & mayo at home. He is Polish. Sorry Katy, you have to have grown up with Marmite to even touch the stuff. And yes Quark is essentially greek yogurt. It is just all the liquid removed, that's all. I know people who made it at home by putting yogurt in cheese cloth & suspending it over a bowl for the liquid to drip into.  But blood sausage...EWwwwww, Steve's Mom loved the stuff AND head cheese...yuk.

Oh, Katy! That just makes my stomach churn at the thought of mayo and fries. I'm not a big mayo fan anyway, and that combo just sounds awful. Give me good old ketchup and salt on my fries, please. lol The yeast thing June was talking about sounds horrible too. ugh!

The German breakfast thing was odd...I'm not used to having dark mustard on my breakfast meal. We eat cereal, or eggs and bacon or sausage and toast. Or maybe fruit, a bagel with cream cheese, or a pastry of some sort.

Chips (aka french fries) and mayo - yummy!  Very Dutch too, that habit.  I do agree about the German breakfast thing though - very odd.

That is so true, you two! (June and Gail) While living in Germany we too came across weird things that George and I found disgusting to eat, and now have seen, have caught on in other areas around the world. One of them was 'pom fritz eaten with mayo as a dipping sauce', pom fritz being french fries. ugh, yuck, disgusting! There was also another thing called Qwark (hope that's close to the spelling) that was put on hard rolls, and the closest thing we could liken it to was some kind of yogurt/cream cheese combination. Now, with the Greek yogart becoming so popular, and having tried it, my husband thinks that is what it was. To me, the oddest thing, was having hard rolls with slices of meat and cheese for breakfast. Blood sausage being the worst. I never would touch that stuff.

Thanks June - no it's not too late at all.  Thanks for converting it all for me.  I have found that different web sites giving different conversion rates aargh!  And as for Marmite - YUMMY! I love the stuff.  The ad when I was a kid used to say mmmmmmmmmmmmmmmMarmite!  As you say, now they really play on the love it or hate it slogan, as it is so true.  There is no middle of the road with Marmite (the Aussies and Kiwis call it vegemite and it's almost the same thing).  btw Mick went out for a couple of hours yesterday unexpectedly - couldn't believe my luck, so the wine bottle is nearly finished!

LOL , I KNOW THE FOOD IS SO DIFFRANT , WHEN I WENT ON VACATION THERE , I HATED THE FOOD !MY MAN IS THERE NOW , WHEN HE COMES HOME IN ABOUT 5 WKS , HE'L HAVE ALL KINDS OF FUNNY STUFF, IN HIS HOME COMMING BAG TO TASTE , HE LOVE TO TRY EVERY THING , THE MINI CAKES THEY SEEL HE LOVESALL THEM ,

It is this totally gross spread made from yeast "sludge"!! The by product from beer making. It looks awful, black, & smells even worse!! My bro-in-lw, a Brit, loved it. It is usually spread on toast.
Their slogan is "Love it or Hate it". It use to be you had to but it at a British shop, but most grocery stores here sell it now. We have so many Brits here.I saw a lady buying her Weatabix Cereal today. New she was a Brit before she opened her mouth! Never liked that cereal. Must have been hard for my Mom when she came here. No familiar food like she could get in Scotland. Especially Baps.
