Wow! That's quite an undertaking! Just off the top of my head, if I was going to do one... I would probably start with making a sheet cake (or half sheet cake, depending on size you are wanting) after cooled, cut into 3 sections and stack using your buttercream and then do a thin coat, set in freezer for about 30 min, and start shaping the body of the plane. You could probably make another sheet cake and cut this one in half and use each half to shape the wings. The rest will depend on whether you are using fondant or buttercream to make your accents for the plane. Hope that helps and good luck!
