The reason I am giving myself 3 days is because the bride would like to have chocolate cake for her mini and wedding cakes with fudge in btw the layers. Im just worried that the cakes might dry out if I make them earlier. But thinking about it, I think it should be alright to do the cakes earlier (1 week), cover them with fudge and put them in the fridge, then take them out as I cover them. Wanna share your thots on this. Anyway I need to do this for the 20th of Feb.
