Most Moist Cake Baking Tip!

I developed this technique over 25 years ago. It was published in Cooking Pleasures Magazine in 2004.

You can use this on any cake scratch or box mix, or doctored box mix, with the exception of Angel Food Cake. The thing that most people don't realize is the the steam that is created during the baking process is what makes a cake moist and retains the flavors of the cake. wanted to comment on your post 'most moist cake baking tip' I have been doing this for over twenty years and my cakes have always been so moist that people rave about them. when I tell people my "secret" they can't believe it. So many cake decorators will say to never freeze your cake because it dries them out but that is only true if you let it cool then freeze. I started doing it that way, right from the oven to the freezer just to make it cool faster and I liked frosting when it was frozen. I found I got so many compliments that I figured I'd just kept doing it....glad to know another professional does it too!!!
