Hi Amelia, How have you been? Are you working on anything new? How did your airbrush class turn out. I have been working on new cakes. Did my first pocketbook cake and corset cake this past week. They are in my pictures. Hope all is well with you and hope you are staying cool with all the heat.

Nothing new right now. I have 3 cakes that I am doing this month for 2 birthdays and another engagement party. I am going to try to make a fondant Betty Boop for one of the cakes. I took my tall cakes class, which just told us how to properly put together 2 or moretiers. This month, I want to take a class on a topsy turvy cake but I don't think my schedule is going to let that happen. I so want to learn to airbrush. My husbands birthday is next week and I am trying to figure out what I want to do for his cake...not that it really matters because it is an excuse to practice something new. lol Good luck with your class.

I don't have a recipe that I have actually tried. If you can go to www.cakecentral.com, they have a recipe link. It is free to join their site. This is where I got my strawberry cake recipe. Just make sure to read any reviews. People are very honest about their reviews. Like I said I have a chocolate cake recipe but I haven't tried it yet. If you want me to send it to you, just let me know but I think Cake Central will help you tremendously.

I want to take the airbrushing. Roses are the hardest for me too but I have practiced alot and still do. For the strawberry cake, I covered it all in buttercream and then the red dripping stuff is actually a simple ganache recipe. I used the red candy melts(vanilla flavored) with I think a half cup of heavy cream and then I just poured and drizzled the candy over it.

My husband gave me my first class for Christmas and I started in January with the basics, then February I did the gumpaste flowers and then last month the fondant course. I still have the tall cakes class and the other gumpaste flower class that I want to do. I just love to decorate and I am practicing ALL the time. My husband gave me cake dummies for my birthday so I can practice without having cake to eat or give away. Try the cakecentral website, you can get alot of ideas from there as well as from Cakes we bake. I am always looking at cake pictures on the computer and of course I watch EVERY cake show on tv. THe cake I told you to check out in my pictures, I had gotten the idea from a picture I saw. Of course I changed it up a little bit. Also my favorite kind of cake to do is the basketweave. It is a little time consuming, but I love to do it.

This is a recipe I got from another site, cakecentral.com I read all the reviews on this recipe and changed it just a little after reading them.

I made it for a friends engagement cake, if you look at my pictures it was the one with the red buttercream flowers and red ganache dripping from it. I was told it had great reviews and I actually have been asked to make another one.

 

1 Box Duncan Hines Strawberry Supreme cake mix...(D.H. doesn't get as soagy as others)

1 C All Purpose Flour

1 C Sugar

3 Tablespoons of strawberry jello, (powder, not already made)

4 Eggs

1 C sour cream

1 1/3 C water

2 tsp strawberry extract **************see note at bottom**************

1/4 C pureed fresh strawberries

 

Combine dry ingredients. Add remaining ingredients, mix on low until combined, then on medium about 2 minutes. Bake at 350 about 30 minutes then check for doneness.

MAKES 2 8" wILTON 2" TALL PANS

 

******2 TSP OF STRAWBERRY EXTRACT IF ONLY USING THE GOOD REAL EXTRACT, IF USING McCormick than use, 1/2 tsp strawberry extract and 1 1/2 tsp Real vanilla extract not imitation vanilla. ************

This is how I did mine, I also covered my cake with buttercream and as a filling I cut fresh strawberries and mixed them with buttercream in the center. I made sure I put a border/ dam around the outside of the center of the cake so the filling mixture would not seep out. I also put a thin layer of bc on the cake before putting the strawberry mixture then put another layer of bc on top of that so that the strawberries would not soak into the cake. (I hope you understand what I mean)

Everyone loved this cake!
