The sugar paste is put on in sections, the back of the wave goes on first then another piece goes on the front of the wave, meeting the back piece and beyond making a lovely curve of the wave. Make sure you have a piece of waxed paper dusted with cornflour and something cylindrical to hold the wave until it dries.(I normally leave it over night
