You probably will never figure out the why of it? One thing I have learned since I started baking and decorating is that there are so many variables when it comes to baking and decorating. Icing gets too soft if it's too humid, too stiff if it's too dry, etc., and baking... well, that's something altogher different. Even if you do things exactly the same as when it turned out for you the first time, it can still change. It's maddening but we love it so we will forge ahead.
