16th birthday cake for my niece, bottom tier chocolate mud cake w/cannoli filling, middle vanilla cake with cookies & cream filling, top cinnamon swirl w/cinnamon apple filling, covered in SMBC & MMF--really need to stop trying different recipes for mmf fondant--this one had a very weird texture

You have lived a deprived life!!!! Cannoli's are to die for. Too hard to make the cannoli wrapper, but I have made the filling to put in crepes. Mmmmmmm Grew up around a lot Italians and there were & still are several wonderful Italian bakeries here.

I don't always follow recipes for my filling.  For the cannoli filling, I used a small container of full fat ricotta cheese (16oz?), 8 oz cream cheese, orange zest to taste, miniature chocolate chips, orange liqueur or extract, approx 1/2 c of confectioner's sugar, 1/4 c of whipping cream.  I think I also added a little instant vanilla pudding to make it more stable.  I really just add everything until I'm satisfied with taste & consistency.  I like to whip the ricotta either in blender or mixer for smoothness.  This is a favorite in my family especially with chocolate cake.

I can tell you one thing Magdalena, very few people turned down a piece of birthday cake.  Usually most people turn down the birthday cake and go for the other desserts.  Not this time.  I had the chocolate mud cake and I love the cannoli filling with a hint of orange.  Love that combination.  Even my sister-in-law who does not care for chocolate had a piece & commented liked it.
