Happy Birthday Sandra Smiley!
Moist fruit cake baked with a layer of marzipan in the middle and topped with a layer of marzipan and a marzipan sunflower.
Based on the traditional Simnel cake, but with the sunflower leaves representing the 11 apostles instead of the usual balls of marzipan. Hope you have a wonderful day Sandra - my gosh, you're wearing well my dear!

Thank you, sweet Katy! I really appreciate your thoughtfulness. This looks and sounds so yummy. Such a beautiful design, too! I have fruit soaking in rum for fruitcake right now and already purchased the almonds to make marzipan, so I will be able to make something similar soon.
