With your kind of work i think you should start your own business,i hope you consided writing a book,there is lots of books out there but most of the books have poor quality of work.I thought of writing a book but still not very confident.

yeah it's only an icing not a royal icing, i'm using piping jelly or frosting( choco , vanilla or creamcheese)

I  love the writing is it written in royal icing or cut outs if i may ask?
