In the freezer, slits cut into pastry. Cover well with tin foil, then plastic wrap. Bring to room temp out of the freezer.... then into the oven. :o)

OOWWW I WILL HAVE TO TRY THAT ; ) I NEVER FROZE THEM , DO YOU BAKE THEM FIRST ?

I do my crust in the food processor too.  Found that  by handling it less with my hands, the crust is flakier.

Going to pick the apples in my yard in 2wks . Then will make a couple of apple pies. Freeze for thanksgiving. I do make wicked pastry. I do the 5 cup recipe. Make in food processor, use less liquid that way. Less liquid, short crust. Also replace water with vodka. Alcohol disappears and makes for a very flaky crust.... :o)

Looks good, apple pie a favorite of mine.
I have an small apple tree in my yard and just made a apple crisp yesterday. My pie crust never comes out as good as my Mom's so I just make "crisps."
