My fondant it is terrible. I used 16 oz. marshmallows and approx 7 cups sugar and 1 1/2 tablespoons water.

I usually go by weight on the powdered sugar instead of by cups. You can pick up a cheap postage scale that will help you weigh (get one that does tare weight) it out. I know a few people mentioned in chat they don't refrigerate their fondant, but I do and find it lasts up to about 3 weeks that way. I just take out as much as I think I'm going to need and let it set on the counter for about an hour before using it. Never had a problem.

dont add water.... just a bag of mm and a bag of psugar and lots of greased up hands
